Ingredients

400 g almonds, toasted and salted
20 cl argan oil
200 g honey

Method

Toast the whole almonds on a baking tray lined with baking paper in an oven preheated to 170 °C for about 15 minutes.
Take them out of the oven and salt them.
Grind them to a powder in the mill while still warm.
Stir the almond powder with the argan oil and honey into a smooth, even paste.

Variations

Choumicha serves amlou with couscous or berkoukes, together with thyme-flavoured clarified butter, argan oil and honey.
