Fekkas

Ingredients

• 220 g icing sugar
• 70 g butter
• 3 eggs
• 1/4 tsp mastic
• 2 tbsp orange blossom water
• 1/2 tsp salt
• 1 sachet baking powder (7 g)
• 480 g flour
• For the mix-ins:
• 1 tbsp anise
• 50 g raisins
• 200 g almonds
• 2 tbsp sesame seeds

Method

1. Beat the icing sugar, butter and eggs in a large bowl.
2. Add the mastic, orange blossom water, salt, baking powder and flour and work into a firm, smooth dough.
3. Work the anise, raisins, almonds and sesame into the dough.
4. Shape logs 4 cm thick and pre-bake them in an oven preheated to 180 °C for 15 to 20 minutes.
5. Wrap the logs in a tea towel, let them cool and leave them in the freezer to harden.
6. Cut the frozen logs into slices.
7. Bake the slices at 180 °C until golden, let them cool and keep them in an airtight tin.
