Ghriba bahla with smen

Ingredients

• 125 g butter
• 125 g sugar
• 12.5 cl sunflower oil
• 1 sachet baking powder (7 g)
• 125 g toasted sesame seeds
• 400 g flour
• 1/2 tsp salt
• 1/2 tsp cinnamon
• 1 tsp smen (aged, salted butter)

Method

1. Grind the sesame seeds.
2. Mix the sesame, butter, oil, sugar, flour, baking powder, salt, cinnamon and smen into an even dough.
3. Knead the dough for 10 to 15 minutes.
4. Shape small balls, flatten them and press them onto the domes of the baking tray.
5. Bake in an oven preheated to 180 °C until golden.
6. Leave to cool completely before taking them off the tray.
