Aadess with dried meat and carrots

Ingredients

• 100 g dried meat (gueddid)
• 350 g lentils
• 3 garlic cloves
• 1 tomato
• 1 tsp tomato paste
• 1 tsp cumin
• 1 tsp mild red paprika
• 2 carrots
• 3 tbsp olive oil
• 2 tbsp sunflower oil
• 1 tbsp parsley and coriander, chopped
• Salt
• 1.5 l water

Method

1. Soak the strips of dried meat in water for 15 minutes to remove some of the salt, drain and cut into pieces.
2. Scrape the carrots and cut them into even pieces.
3. Put the dried meat, the tomato in pieces and the chopped garlic into a pot and pour in the water.
4. Cook covered over low heat for 30 to 40 minutes until the meat is tender.
5. Add lentils, tomato paste, carrots, spices, oil and herbs.
6. Keep cooking covered over low heat, adding a little boiling water if needed, until the lentils are done, and serve piping hot.
