Bissara

Ingredients

• 400 g broad beans
• 6 garlic cloves
• 2 l water
• 1 tsp cumin
• 1 tsp paprika
• 1 tsp salt
• 10 cl olive oil
• To serve: olive oil, paprika and cumin

Method

1. Bring the beans, garlic and water to the boil in a pot over medium heat.
2. Lower the heat and skim off the rising foam for 10 to 15 minutes.
3. Half cover the pot so that nothing boils over and cook over low heat until the beans fall apart.
4. Press the beans through a fine sieve to make a smooth, creamy purée.
5. Season the purée with the spices over low heat and stir in the olive oil until everything is even.
6. Serve piping hot with olive oil, paprika and cumin.
