Gazelle horns with sesame

Ingredients

• 650 g homemade almond paste
• 2 tbsp orange blossom water
• 3 pinches of mastic
• 50 g butter
• To decorate:
• 2 egg whites, lightly beaten
• 350 g sesame seeds

Method

1. Work the almond paste smooth with the orange blossom water, the mastic crushed with a little sugar, and the butter.
2. Shape into rolls 1.5 cm thick and divide into equal, finger-length pieces.
3. Draw the pieces through the egg white and coat them thickly all over with sesame.
4. Thin out the ends of each piece and bend it into a horn.
5. Place on a tray lined with baking paper and bake in an oven preheated to 180 °C for 10 to 11 minutes.
6. Leave to cool completely before taking them off the tray; press any cracks closed quickly straight after baking.
