Variations
- According to the study for WIPO and OMPIC, the most widespread kinds are the harira of Fez (fassia) and that of Marrakesh (mrakchia), along with that of the Souss.
- The Fez harira gets rice and eggs, the Marrakesh one does not; there vermicelli is used or, especially in winter, sometimes cracked barley (belboula).
- Celery, coriander and parsley are sometimes joined by savory, marjoram, oregano and bay leaf.
