Oven-baked maakouda with minced meat

Ingredients

• 400 g seasoned minced meat
• 4 tbsp breadcrumbs
• 1 onion, thinly sliced
• 5 tbsp olive oil
• 3 courgettes
• 1 red pepper
• 3 sprigs thyme
• 80 g grated cheese
• 1 tsp salt
• 1/2 tsp pepper
• 8 eggs
• 2 tbsp milk

Method

1. Grill the red pepper, skin, deseed and cut it into thin strips; cut the courgettes into thin sticks and fry both in 3 tbsp oil.
2. Soften the onion in 2 tbsp oil over low heat until golden.
3. Mix the minced meat, breadcrumbs, onion and 4 eggs, and season with salt and pepper.
4. Beat the remaining eggs with the cheese, milk, salt and pepper.
5. Spread the meat mixture in a tin lined with baking paper, top with the courgettes and pepper and sprinkle with thyme.
6. Pour the egg mixture over it and bake in an oven preheated to 170 °C for about 25 to 30 minutes.
7. Leave to rest for 10 minutes in the switched-off oven, then turn out and cool on kitchen paper.
8. Serve with a salad of raw vegetables.
