Taktouka with fried peppers, for chicken tagine

Ingredients

• 6 tomatoes
• 2 green peppers
• 2 garlic cloves
• 2 tbsp parsley and coriander, finely cut
• 4 tbsp olive oil
• 1 small piece of sugar
• 1 tsp salt
• 1 tsp paprika
• oil for frying

Method

1. Peel, deseed and finely chop the tomatoes.
2. Fry the peppers, skin, deseed and cut them into thin strips.
3. Cook the tomatoes with the garlic, olive oil and sugar in a pan over low heat for 10 minutes.
4. Add the spices, herbs and pepper strips and cook for 10 to 15 more minutes.
5. Spoon over the braised chicken, drizzle with the cooking sauce and serve hot.
